Quick and Delicious Microwave Chicken Pecan Salad



Ingredients



- 2 cups cooked chicken, chopped
- 1 cup celery, finely chopped
- 1/2 cup onion, finely chopped
- 1/2 cup pecans, toasted and chopped
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Instructions



1. Prepare Ingredients: Collect all ingredients, ensuring chicken is cooked and chopped, celery and onion are finely chopped, and pecans are toasted and chopped.

2. Mix Ingredients: In a large microwave-safe mixing bowl, combine the chopped chicken, celery, and onion.

3. Toast Pecans:
- Place the chopped pecans in a separate microwave-safe bowl.
- Microwave on High for PT2M (about 2 minutes), stirring every 30 seconds until they are fragrant and slightly darker in color. Be cautious not to burn.

4. Create Dressing: In a small bowl, whisk together mayonnaise, Dijon mustard, salt, and black pepper until smooth.

5. Combine All Ingredients: Add the toasted pecans to the bowl with chicken and vegetables. Pour the dressing over the top and mix gently to combine all ingredients evenly.
