Quick and Delicious Microwave Tuna Pasta Salad
Ingredients
- 8 oz pasta (preferably penne or fusilli)
- 1 can (5 oz) tuna in olive oil, drained
- 1 cup cherry tomatoes, halved
- 1 cup red bell pepper, diced
- 1/2 cup pitted black olives, sliced
- 2 cups fresh arugula
- 2 tbsp lemon juice
- 2 tbsp capers, rinsed and drained
- 1/4 cup sliced pepperoncini peppers
- Salt and pepper to taste
Instructions
1. Prepare the Pasta:
- Place the pasta in a microwave-safe bowl. Add enough water to cover the pasta by at least 1 inch.
- Cover the bowl with a microwave-safe lid or plastic wrap, leaving a small opening for steam to escape.
- Microwave on high for 10-12 minutes, stirring halfway through, until the pasta is al dente.
- Carefully drain the pasta and rinse with cold water. Set aside.
2. Prepare the Vegetables:
- In another large microwave-safe bowl, combine the cherry tomatoes, red bell pepper, and black olives.
- Cover and microwave on high for 3-4 minutes until soft but still retaining some crunch.
3. Assemble the Salad:
- To the bowl of vegetables, add drained pasta, arugula, drained tuna, lemon juice, capers, and pepperoncini peppers.
- Mix gently to combine all ingredients, ensuring the tuna is evenly distributed.
4. Season and Serve:
- Add salt and pepper to taste and toss once more.
- Allow the salad to sit for a few minutes to let the flavors meld.
- Serve immediately, or refrigerate for up to 2 days for enhanced flavor.
