Quick and Flavorful Microwave Chicken Tikka Masala with Basmati Rice
Ingredients
- 1 1/2 cups Basmati rice
- 2 cups Chicken Tikka Masala sauce
- 1/2 cup cooked chicken breast, diced
- 1 tablespoon unsalted butter
- 1/4 cup water
- Salt, to taste
- Fresh cilantro, for garnish (optional)
Instructions
1. Prepare the Rice:
- Rinse 1 1/2 cups of Basmati rice under cold running water until the water runs clear to remove excess starch.
- In a microwave-safe bowl, combine the rinsed rice, 2 1/2 cups of water, 1 tablespoon of unsalted butter, and a pinch of salt.
- Cover the bowl with a microwave-safe lid or plastic wrap with a small opening for steam to escape.
- Microwave on high power for PT12M (12 minutes).
- Let it sit, covered, for an additional PT5M (5 minutes) to allow the rice to finish cooking in its steam.
2. Prepare the Chicken Tikka Masala:
- In another microwave-safe bowl, combine 2 cups of Chicken Tikka Masala sauce, 1/2 cup of cooked and diced chicken breast, and 1/4 cup of water.
- Stir the mixture well to ensure the chicken is coated evenly with the sauce.
- Cover the bowl with a microwave-safe lid or plastic wrap and microwave on high power for PT5M (5 minutes).
- Stir halfway through to ensure even heating.
- Let the mixture sit for 1 minute before removing the cover to allow flavors to meld.
3. Combine and Serve:
- Fluff the Basmati rice with a fork and divide evenly onto serving plates.
- Spoon the Chicken Tikka Masala evenly over the rice.
- Garnish with freshly chopped cilantro if desired.
