Quick and Flavorful Soy Vinaigrette Stir Fry



Ingredients



- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
- 1 tablespoon honey
- 1 clove garlic, minced
- 1 teaspoon ginger, grated
- 1/4 teaspoon crushed red pepper flakes (optional for heat)
- 1 pound chicken breast, thinly sliced
- 2 cups mixed bell peppers, julienned
- 1 cup broccoli florets
- 1 cup snap peas
- 1/4 cup green onions, chopped
- Sesame seeds for garnish

Instructions



1. Prepare the Soy Vinaigrette:
In a small bowl, combine soy sauce, rice vinegar, olive oil, sesame oil, honey, minced garlic, grated ginger, and red pepper flakes. Whisk until well combined and set aside.

2. Marinate the Chicken:
In a mixing bowl, add the thinly sliced chicken breast and half of the prepared soy vinaigrette. Toss to coat evenly and let it marinate for about 10 minutes.

3. Heat Up the Skillet:
Preheat a large skillet or wok over medium-high heat. Add a splash of olive oil (about a teaspoon) to prevent sticking.

4. Cook the Chicken:
Add the marinated chicken to the hot skillet. Stir-fry for about 5-7 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

5. Stir Fry the Vegetables:
In the same skillet, add the bell peppers, broccoli, and snap peas. Stir-fry for 4-5 minutes, allowing the vegetables to retain their crispness.

6. Combine and Finish:
Return the chicken to the skillet with the vegetables. Add the remaining soy vinaigrette and toss everything together, ensuring the ingredients are well coated and heated through.

7. Serve:
Transfer the stir fry to a serving platter. Garnish with chopped green onions and sesame seeds. Enjoy immediately!
