Quick & Easy Microwave Lemon Cheesecake Cups



Ingredients



- 1 can (14 oz) sweetened condensed milk
- 8 oz cream cheese, softened
- 1/3 cup fresh lemon juice
- 1 cup assorted cookies (e.g., shortbread, graham crackers)
- 1/2 cup sweet crackers (e.g., Ritz crackers)
- 1 cup mixed fresh fruit (e.g., berries, kiwi, mango)

Instructions



1. Prepare the Crust:
- Crush the assorted cookies and sweet crackers into fine crumbs using a food processor or place them in a ziplock bag and crush with a rolling pin.
- Divide the crumbs evenly among 4 microwave-safe dessert cups or ramekins. Press down gently with the back of a spoon to form the base.

2. Make the Cheesecake Filling:
- In a medium mixing bowl, blend the softened cream cheese with an electric mixer until smooth and creamy.
- Add the sweetened condensed milk to the cream cheese and mix on medium speed until fully combined and smooth.
- Slowly incorporate the fresh lemon juice into the mixture, continuing to blend until the filling thickens slightly.

3. Assemble the Cheesecake Cups:
- Spoon the cheesecake filling evenly over the cookie crumb base in each cup.
- Smooth out the tops with a spatula or the back of a spoon.

4. Microwave Cooking:
- Place each cup in the microwave one at a time.
- Microwave on medium-high (70% power) for about 2 minutes, checking every 30 seconds after the first minute to avoid overheating. The filling should be set but still slightly wobbly in the center.

5. Chill and Garnish:
- Allow the cups to cool slightly at room temperature before transferring them to the refrigerator.
- Chill the cheesecake cups for at least 2 hours until completely set.
- Before serving, top each cup with an assortment of fresh fruit.
