Quick Rotisserie Chicken & Tortellini Soup
Ingredients
- 3 cups shredded rotisserie chicken (approx. 1 medium chicken)
- 1 package frozen cheese tortellini (12 oz)
- 2 medium carrots, sliced into coins
- 1 medium onion, diced
- 2 stalks celery, chopped
- 6 cups water
- 3 tablespoons chicken bouillon granules
Instructions
1. Prepare Ingredients:
- Shred the rotisserie chicken into bite-sized pieces and set aside.
- Slice the carrots into coins and dice the onion.
- Chop the celery into small pieces.
2. Start the Soup Base:
- In a large stockpot, add 6 cups of water and bring to a boil over medium-high heat.
3. Flavor the Broth:
- Add 3 tablespoons of chicken bouillon granules to the boiling water.
- Stir until the bouillon is completely dissolved to create a flavorful broth.
4. Cook the Vegetables:
- Once the broth is simmering, add the sliced carrots, diced onion, and chopped celery.
- Reduce heat to medium and let them cook for approximately PT10M (10 minutes) until they start to soften.
5. Add Chicken and Tortellini:
- Stir in the shredded rotisserie chicken and the package of frozen tortellini.
- Continue to cook for an additional PT10M (10 minutes) or until the tortellini is tender and heated through.
6. Final Seasoning:
- Taste the soup and adjust seasoning with additional salt or bouillon granules if needed.
7. Serve:
- Ladle the soup into bowls and serve hot, garnished with fresh parsley if desired.
