Refreshing Arugula Citrus Chicken Salad with Sesame Yogurt Dressing



Ingredients



- For the Salad:
- 4 cups arugula
- 2 cooked chicken breasts, sliced
- 1/2 cup dried cranberries
- 2 clementines, peeled and segmented
- 2 tablespoons toasted sesame seeds
- 4 ounces bonito mushrooms, sliced
- 4 ounces oyster mushrooms, sliced
- For the Dressing:
- 1 cup Greek yogurt
- 2 tablespoons lemon juice
- 1 tablespoon soy sauce
- 2 tablespoons honey
- 1 tablespoon maple syrup
- 1 teaspoon kombu extract

Instructions



1. Prepare the Dressing:
- In a mixing bowl, combine Greek yogurt, lemon juice, soy sauce, honey, maple syrup, and kombu extract. Whisk together until smooth and well mixed. Set aside to allow flavors to meld while you prepare the rest of the salad.

2. Toast the Sesame Seeds:
- Place a nonstick skillet on the stove over medium heat. Add the sesame seeds. Toast them for about 3 minutes, stirring constantly to prevent burning, until they are golden brown and fragrant.

3. Cook the Mushrooms:
- In the same skillet, add a couple of teaspoons of oil if necessary. Add the sliced bonito and oyster mushrooms. Sauté for about 5-7 minutes or until they are soft and slightly browned. Remove from heat and allow to cool slightly.

4. Assemble the Salad:
- In a large salad bowl, combine the arugula, cooked chicken breast slices, dried cranberries, clementine segments, and the sautéed mushrooms. Gently toss to mix the ingredients evenly.

5. Add the Dressing:
- Pour the sesame yogurt dressing over the salad. Gently toss until all elements are coated evenly.

6. Garnish and Serve:
- Sprinkle the toasted sesame seeds over the top of the salad for added crunch. Serve immediately.
