Refreshing Cucumber and Yogurt Herb Salad
Ingredients
- 2 large cucumbers, thinly sliced
- 1 medium red onion, thinly sliced

- 1 cup plain yogurt
- 1 cup Greek yogurt
- 1/2 cup labneh
- 2 tablespoons fresh dill, finely chopped

- 1/2 cup sour cream
Instructions
1. Prepare the Cucumbers and Onions:
- In a large bowl, combine the thinly sliced cucumbers and red onion.
- Sprinkle with 1 teaspoon of Kosher salt and let it sit for 10 minutes to release excess moisture from the cucumbers and enhance the flavors.
2. Mix the Yogurt Dressing:
- In a separate medium bowl, whisk together the plain yogurt, Greek yogurt, and labneh.
- Add the finely chopped dill, Champagne vinegar, 1 teaspoon of salt, and 1/2 teaspoon of freshly ground black pepper.
- Blend in the sour cream until the dressing is smooth and uniformly mixed.
3. Combine Ingredients:
- Drain any excess liquid from the cucumber and onion mixture, then add them to the bowl with the yogurt dressing.
- Gently fold the ingredients together until the cucumbers and onions are well-coated with the dressing.
4. Chill and Serve:
- Cover the salad and refrigerate it for at least 20 minutes before serving. This allows the flavors to meld beautifully.
- Serve chilled, garnished with a few sprigs of dill if desired.
