Refreshing Lemon Zucchini & Summer Squash Sauté with Smoked Almonds



Ingredients



- 1 Lemon, zested and juiced
- 4 tbsp Extra-virgin olive oil
- 3 cloves Garlic, minced
- 1 tsp Kosher salt
- 1/2 tsp Freshly ground black pepper
- 2 Summer squash, sliced into thin rounds
- 2 Zucchini, sliced into thin rounds
- 1/4 cup Fresh basil, chiffonade
- 1/2 cup Pecorino Romano cheese, finely grated
- 1/4 cup Smoked almonds, coarsely chopped

Instructions



1. Preparation: Start by zesting and juicing the lemon, and gathering all your ingredients so they're within arm's reach.

2. Heat the Oil: In a large skillet over medium heat, pour in the extra-virgin olive oil. Allow it to heat for about 2 minutes.

3. Sauté the Garlic: Add the minced garlic to the skillet. Sauté for about 1 minute, or until the garlic is fragrant but not browned.

4. Cook the Squash and Zucchini: Gently add the sliced summer squash and zucchini to the skillet. Season with kosher salt and freshly ground black pepper. Toss everything to ensure an even mix. Let them cook for about 7-8 minutes, stirring occasionally, until the veggies are tender but still have a slight bite.

5. Lemon Infusion: Once the squash and zucchini are cooked, drizzle them with the lemon juice and sprinkle with lemon zest. Toss well to coat the vegetables evenly with the citrus flavor.

6. Finish with Cheese and Nuts: Remove the skillet from the heat. Sprinkle the Pecorino Romano over the top, allowing it to gently melt. Add the smoked almonds and carefully mix.

7. Garnish and Serve: Garnish the dish with fresh basil chiffonade. Serve immediately as a light lunch.
