Rich and Velvety Turkey Stock Gravy for Dinner

Ingredients

- 4 cups turkey stock
- 3 tablespoons fat (e.g., butter or turkey drippings)
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder

Instructions

1. Prepare the Roux:
- In a medium-sized saucepan, place the fat over medium heat. Once melted, add the all-purpose flour.
- Stir continuously with a wooden spoon or a whisk to combine, cooking for about 3 minutes, or until the mixture turns a light golden brown. This creates a roux which will help thicken your gravy.

2. Incorporate the Turkey Stock:
- Gradually add the turkey stock to the roux, about 1 cup at a time, whisking constantly to prevent lumps from forming.
- Once all the stock is incorporated, continue to whisk until the mixture is smooth.

3. Season the Gravy:
- Add salt, black pepper, dried thyme, onion powder, and garlic powder to the mixture. Stir well to incorporate the seasonings into the gravy.

4. Thicken the Gravy:
- Reduce the heat to low and let the gravy simmer for approximately 10 minutes, stirring occasionally. This allows the gravy to thicken and the flavors to meld together.

5. Final Taste and Adjustments:
- Taste your gravy and adjust the seasonings as necessary. If you desire a thicker consistency, continue simmering for a few more minutes. If it becomes too thick, you can thin it with a bit more turkey stock or water.

6. Serving:
- Once the desired consistency is achieved, your rich and velvety turkey stock gravy is ready. Transfer it to a gravy boat or pour directly over your favorite dishes such as mashed potatoes, roast turkey, or stuffing.
