Rich Beef Stew with Caraway and Paprika



Ingredients

Instructions



1. Prepare the Ingredients:
- Cut the beef into 1-inch cubes if not pre-cut.
- Slice the onions thinly and chop the carrots and potatoes into desired sizes.
- Measure out the spices and butter.

2. Sear the Beef:
- In a large pot or Dutch oven, melt butter over medium-high heat.
- Add the beef cubes and brown on all sides, about 5-7 minutes. Remove beef from the pot and set aside.

3. Sauté Onions and Spices:
- In the same pot, add the onions and sauté until golden and translucent, about 5 minutes.
- Stir in the caraway seeds and paprika, cooking for an additional 2 minutes to release their flavors.

4. Thicken with Flour:
- Sprinkle the flour over the onions and spices. Stir well until fully incorporated, cooking for another 1-2 minutes to form a roux.

5. Create the Stew Base:
- Gradually pour in the beef broth, whisking constantly to avoid lumps.
- Add the diced tomatoes and return the beef to the pot. Stir well to combine.

6. Simmer and Cook the Vegetables:
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1 hour.
- Add the potatoes and carrots, season with salt and pepper, and continue to simmer, covered, for an additional 30 minutes or until the vegetables and beef are tender.

7. Finish and Serve:
- Adjust seasoning to taste and sprinkle with fresh parsley.
- Serve warm with a dollop of sour cream on top, accompanied by egg noodles, elbow macaroni, or mashed potatoes.
