Rich Creamy Vegetable and Pancetta Lasagna
Ingredients
- 1 cup heavy cream
- 2 tablespoons fresh sage, chopped
- 6 ounces pancetta, diced
- 1 medium zucchini, thinly sliced
- 1 cup broccoli florets
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon juice
- 1/4 teaspoon nutmeg
- 10 no boil or fresh lasagna noodles
- 1 cup raclette cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons fresh parsley, chopped
Instructions
1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Cream Sauce:
In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until golden brown, forming a roux. Gradually whisk in the heavy cream and bring to a simmer. Add the nutmeg, lemon juice, salt, and black pepper. Let it cook for another 3 minutes, stirring constantly until thickened. Remove from heat.
3. Cook the Pancetta and Veggies:
In a skillet over medium heat, cook the diced pancetta until crispy, about 5 minutes. Remove from the pan and set aside. In the rendered fat, sauté the zucchini slices and broccoli florets for 3-4 minutes until slightly softened. Add the chopped sage and mix well.
4. Layer the Lasagna:
In a 9x13 inch baking dish, spread a thin layer of the cream sauce on the bottom. Layer with 3-4 lasagna noodles. Top with a portion of the pancetta, vegetables, and a few spoonfuls of sauce. Sprinkle with the raclette, mozzarella, and Parmesan cheeses. Repeat this layering process until all ingredients are used, finishing with a layer of cheeses on top.
5. Bake the Lasagna:
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the top is golden and bubbly.
6. Garnish and Serve:
Let the lasagna cool for 10 minutes before slicing. Garnish with fresh parsley before serving.
