Rich & Hearty Tomato Basil Sauce for Dinner Bliss
Ingredients
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 1 large carrot, finely grated
- 4 cloves garlic, minced
- 1 can (28 oz) whole canned tomatoes
- 1 can (28 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 tablespoon sugar
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh basil leaves, chopped
Instructions
1. Heat the Olive Oil:
Place a large saucepan over medium heat. Add 2 tablespoons of olive oil and allow it to warm up for about 1-2 minutes until shimmering.
2. Sauté the Aromatics:
Add the finely chopped onion to the saucepan. Sauté for 5-6 minutes until translucent, stirring occasionally. Add the grated carrot and continue to cook for another 3 minutes.
3. Add Garlic:
Stir in the minced garlic and sauté for 1 minute or until fragrant, being careful not to burn.
4. Incorporate the Tomatoes:
Pour in the whole canned tomatoes (with their juices) and the crushed tomatoes. Break down the whole tomatoes with the back of a spoon or a potato masher for a smoother consistency.
5. Stir in Tomato Paste & Seasonings:
Mix in the tomato paste, sugar, dried oregano, salt, and black pepper. Stir well to combine all the ingredients.
6. Simmer the Sauce:
Bring the sauce to a gentle boil, then reduce the heat to low. Let it simmer uncovered for 30 minutes, stirring occasionally, until thickened and the flavors meld together.
7. Finish with Basil:
Stir in the chopped fresh basil just before serving for a burst of fresh flavor.
