Roasted Autumn Vegetable Medley with Honey Citrus Glaze



Ingredients



- 2 medium carrots, peeled and cut into 1-inch pieces
- 2 medium parsnips, peeled and cut into 1-inch pieces
- 2 large beets, peeled and cut into 1-inch wedges
- 1 small butternut squash, peeled, seeded, and cubed
- 1 small honeynut squash, peeled, seeded, and cubed
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 tablespoons red wine vinegar
- 3 tablespoons honey
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Instructions



1. Preheat the Oven
Preheat your oven to 425°F (218°C).

2. Prepare the Vegetables
Peel and cut the carrots, parsnips, beets, butternut squash, and honeynut squash into uniform pieces. This ensures even cooking.

3. Mix the Glaze
In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, honey, salt, and pepper until well combined.
