Roasted Butternut Squash with Warm Spices



Ingredients



- 1 large butternut squash (about 3 pounds)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 2 tablespoons butter, melted
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg

Instructions



1. Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure it's nice and hot before you start roasting the squash.

2. Prepare the Butternut Squash
Begin by carefully peeling the squash. Cut the squash in half widthwise, then cut each half lengthwise and scoop out the seeds. Dice the squash into 1-inch cubes to promote even cooking.

3. Season the Squash
In a large mixing bowl, combine the diced butternut squash with olive oil and salt. Toss to ensure every piece is evenly coated.

4. Roast the Squash
Spread the seasoned squash cubes in a single layer on a baking sheet lined with parchment paper or aluminum foil. Place in the preheated oven and roast for 25-30 minutes, stirring halfway through, until the squash is tender and slightly caramelized at the edges.

5. Add Warm Spices
While the squash is roasting, melt the butter in a small saucepan over low heat. Once melted, stir in the black pepper, cinnamon, and nutmeg.
