Ingredients
For the Main Dish:
- 4 boneless, skinless chicken breasts
- 3 medium sweet potatoes, peeled and cut into 1-inch cubes
- 1 pound Brussels sprouts, trimmed and halved

Instructions
1. Preheat your oven to 400°F (200°C).
2. Prepare the vegetables:
- In a large mixing bowl, toss the sweet potato cubes and Brussels sprouts with 1 tablespoon of olive oil, 1 teaspoon of kosher salt, and 1/2 teaspoon of black pepper. Spread them out in a single layer on a baking sheet.
3. Season the chicken:
- Rub the chicken breasts with the remaining olive oil. Sprinkle both sides evenly with the remaining salt, pepper, garlic powder, and smoked paprika.
4. Roast the vegetables:
- Place the baking sheet with the sweet potatoes and Brussels sprouts in the preheated oven. Roast for 25 minutes.
5. Bake the chicken:
- After the vegetables have roasted for 10 minutes, add the seasoned chicken breasts to the same baking sheet. Continue roasting for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender and caramelized.
6. Prepare the apple-infused crumble:
- While the chicken and vegetables are roasting, combine the diced apples, crushed cereal, crushed pretzels, melted butter, brown sugar, and cinnamon in a medium bowl. Stir until well combined.
7. Toast the crumble:
- Spread the crumble mixture evenly on a separate baking sheet lined with parchment paper. Bake in the oven (alongside the chicken and vegetables) for 10-12 minutes, stirring halfway through, until golden and crispy.
8. Serve:
- Arrange the roasted chicken, sweet potatoes, and Brussels sprouts on a serving platter. Top with the apple-infused crumble for extra crunch and flavor. Serve immediately.
