Roasted Herb Chicken with Lemon and Garlic
Ingredients
- 2 whole chicken breasts, bone-in and skin-on
- 4 tablespoons olive oil
- 1 lemon, thinly sliced
- 6 garlic cloves, peeled and crushed
- 2 teaspoons sea salt
- 1 teaspoon freshly cracked black pepper
- 1 tablespoon fresh thyme leaves, finely chopped
- 1 tablespoon fresh rosemary leaves, finely chopped
- 1 teaspoon paprika
- 1 cup chicken broth
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C).
2. Prepare the Chicken
Rinse the chicken breasts under cold water and pat them dry with paper towels. Place them in a roasting pan.
3. Season the Chicken
In a small bowl, mix together the olive oil, sea salt, black pepper, thyme, rosemary, and paprika. Rub this mixture evenly over the chicken breasts. Ensure the seasoning gets underneath the skin for maximum flavor.
4. Add Aromatics
Arrange the lemon slices and crushed garlic cloves around the chicken breasts in the roasting pan. Pour the chicken broth into the pan to keep the chicken moist during roasting.
5. Roast the Chicken
Place the roasting pan in the preheated oven. Roast the chicken for approximately 45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
6. Rest the Chicken
Remove the pan from the oven and let the chicken rest for at least 10 minutes, allowing the juices to redistribute.
7. Serve
Slice the chicken and serve it on a platter with roasted lemon slices and garlic as a garnish. Drizzle with the pan juices for added flavor.
