Roasted Herb-Crusted Chicken Thighs
Ingredients
- 8 bone-in, skin-on chicken thighs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 1 lemon, zested and juiced
- 1/4 cup chicken broth
Instructions
1. Preheat the Oven: Preheat your oven to 400°F (approximately 200°C).
2. Season the Chicken: Pat the chicken thighs dry with paper towels. Sprinkle salt and black pepper evenly over the chicken.
3. Prepare the Herb Mixture: In a small bowl, combine olive oil, minced garlic, rosemary, thyme, parsley, lemon zest, and half of the lemon juice. Mix well until all ingredients are combined.
4. Coat the Chicken: Rub the herb mixture generously over each chicken thigh, ensuring that they are well-coated with the herbs and seasonings.
5. Roast the Chicken: Arrange the chicken thighs in a single layer in a baking dish. Pour the chicken broth into the dish, avoiding pouring over the chicken skin.
6. Bake: Place the baking dish in the preheated oven and bake for about 35 minutes, or until the chicken thighs reach an internal temperature of 165°F (75°C) and the skin is crispy and golden brown.
7. Rest and Serve: Once done, remove the chicken from the oven and let it rest for 5 minutes. Squeeze the remaining lemon juice over the top before serving for added freshness.
