Roasted Mediterranean Veggie Pasta with Grilled Chicken



Ingredients



- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 yellow bell pepper, chopped
- 1 red bell pepper, chopped
- 1 zucchini, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes, halved
- 1 tablespoon lemon juice
- 1 cup feta cheese, crumbled
- 1 can (15 ounces) chickpeas, drained and rinsed
- 2 cups grilled chicken, sliced
- 8 ounces pasta (such as penne or fusilli)
- 2 cups marinara sauce
- Salt and pepper to taste

Instructions



1. Preheat Oven:
Preheat your oven to 400°F (200°C).

2. Prepare Vegetables:
In a large mixing bowl, combine the olive oil, minced garlic, basil, oregano, salt, and pepper. Add the chopped yellow and red peppers, zucchini slices, and red onion. Toss well to coat the vegetables in the seasoned oil.

3. Roast Vegetables:
Spread the vegetable mixture evenly on a baking sheet. Roast in the preheated oven for PT20M (20 minutes), stirring halfway through, until the vegetables are tender and slightly charred.

4. Cook Pasta:
While the vegetables are roasting, cook the pasta according to package instructions until al dente. Drain and set aside.

5. Blend Ingredients:
Once the vegetables are roasted, remove them from the oven and combine them in a large serving bowl with the halved cherry tomatoes, lemon juice, crumbled feta cheese, and chickpeas.

6. Heat Chicken and Sauce:
In a separate pan over medium heat, add the sliced grilled chicken and marina sauce. Cook for PT5M (5 minutes), until the chicken warms through and the sauce is heated.

7. Combine and Serve:
Add the cooked pasta and chicken-marinara mixture to the roasted vegetable bowl. Toss to combine all ingredients evenly. Serve immediately with extra feta crumbles if desired.
