Roasted Sweet Maple Butternut Squash
Ingredients
- 1 medium butternut squash
- 2 tablespoons butter
- 2 tablespoons brown sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons brown butter
- 1/4 teaspoon cayenne pepper
- 3 tablespoons maple syrup
Instructions
1. Preheat the Oven: Preheat your oven to 400°F (204°C).
2. Prepare the Butternut Squash: Start by peeling the butternut squash and removing the seeds. Cut the squash into 1-inch cubes for even roasting.
3. Melt Butter and Brown Sugar: In a small saucepan over low heat, melt 2 tablespoons of butter. Once melted, add 2 tablespoons of brown sugar, stirring until the sugar fully dissolves into a smooth mixture.
4. Combine Ingredients: In a large mixing bowl, add the cubed butternut squash. Pour the melted butter and brown sugar mixture over the squash. Add 1 teaspoon of salt, 1/2 teaspoon of black pepper, 2 tablespoons of brown butter, 1/4 teaspoon of cayenne pepper, and 3 tablespoons of maple syrup. Toss the squash gently to ensure every piece is coated evenly.
5. Roast in the Oven: Spread the coated squash cubes on a baking sheet in a single layer, ensuring they are not overcrowded. Roast in the preheated oven for about 25-30 minutes, turning the pieces halfway through to ensure even caramelization. The squash should be tender and lightly browned when done.
6. Serve: Remove the roasted butternut squash from the oven and let it cool for a few minutes. Serve as a delightful side dish or add to a salad for a sweet and savory dinner component.
