Roasted Tomato Snack Medley with Pesto and Nuts
Ingredients
- 4 large tomatoes, quartered
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1 teaspoon dried oregano
- 1/4 cup basil pesto
- 1/4 cup grated Parmesan cheese

Instructions
1. Preheat the Oven:
- Preheat your oven to 400°F (200°C).
2. Prepare the Baking Sheet:
- Line a baking sheet with parchment paper or lightly coat it with non-stick spray.
3. Prepare the Tomatoes:
- In a large mixing bowl, combine the tomato quarters with olive oil, salt, pepper, and dried oregano. Toss gently so that tomatoes are evenly coated.
4. Roast the Tomatoes:
- Arrange the tomatoes in a single layer on the prepared baking sheet, cut side up.
- Roast in the preheated oven for about 20-25 minutes, or until the edges of the tomatoes begin to caramelize and they become tender.

- While the tomatoes are roasting, mix the walnuts, pine nuts, and pumpkin seeds in a small bowl.
6. Assemble the Snack:
- Once the tomatoes are done roasting, remove them from the oven and allow them to cool slightly.
- Transfer the warm tomatoes to a serving platter.
- Drizzle basil pesto liberally over the roasted tomatoes.
- Sprinkle grated Parmesan cheese over the top.
- Finish by scattering the nut mix over the dish.
