Rustic Pumpkin and Sage Lasagna with Asiago Crust



Ingredients


- 2 tablespoons extra-virgin olive oil
- 1 medium onion, finely chopped
- 1 tablespoon fresh sage, chopped
- 2 cups pumpkin purée
- 1 cup half and half
- 1 cup Parmesan cheese, grated
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup ricotta cheese
- 2 large eggs
- 9 oven-ready lasagna noodles
- 1 cup Asiago cheese, grated

Instructions



1. Preheat the Oven:
Preheat your oven to 375°F (190°C). Adjust the oven rack to the middle position for even cooking.

2. Prepare the Pumpkin Sauce:
In a medium saucepan, heat the extra-virgin olive oil over medium heat. Add the chopped onion and cook, stirring frequently, until the onion is soft and translucent, approximately 5 minutes. Stir in the fresh sage and cook for another 1 minute until fragrant. Add the pumpkin purée, half and half, Parmesan cheese, salt, and black pepper. Mix well to combine and bring the sauce to a gentle simmer. Cook for another 5 minutes, then remove from heat and set aside.

3. Make the Ricotta Mixture:
In a small bowl, combine the ricotta cheese and eggs. Stir until smooth and uniformly mixed.

4. Assemble the Lasagna:
In a 9x13-inch baking dish, spread a thin layer of the pumpkin sauce on the bottom. Place 3 oven-ready lasagna noodles on top. Spread half of the ricotta mixture over the noodles, followed by a layer of the pumpkin sauce. Repeat with another layer of noodles, remaining ricotta mixture, and more pumpkin sauce. Finish with the last layer of noodles and the remaining pumpkin sauce. Sprinkle the top evenly with the grated Asiago cheese.

5. Bake the Lasagna:
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. After this, remove the foil and continue baking for an additional 20 minutes or until the Asiago cheese is melted and golden brown.

6. Rest and Serve:
Remove the lasagna from the oven and let it rest for 10 minutes before slicing. This allows the layers to set, making it easier to serve.
