Rustic White Bean and Salami Sourdough Bruschetta



Ingredients


- 1 loaf sourdough bread or baguette
- 1/4 cup extra-virgin olive oil
- 3 cloves garlic, minced
- 1 can (15 oz) white beans, drained and rinsed
- 6 oz sliced salami
- 1/2 teaspoon dried oregano
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup freshly grated Parmesan cheese

Instructions



1. Prepare the Bread:
Slice the sourdough bread or baguette into 1/2-inch thick slices. If using a baguette, angle your cuts to create larger pieces suitable for topping.

2. Toast the Bread:
Heat a large skillet over medium heat. Brush each bread slice lightly with extra-virgin olive oil on both sides. Place the slices into the heated skillet, toasting them until they are golden brown on both sides, about 2-3 minutes per side. Remove the toasted slices and set them aside.

3. Cook the Garlic and White Beans:
In the same skillet, reduce the heat to low and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to let it burn. Add in the white beans, stirring gently for about 2-3 minutes until they are heated through. Sprinkle the dried oregano and black pepper over the beans, mixing well to combine.

4. Assemble the Bruschetta:
Lay the toasted bread slices on a serving platter. Top each slice with a spoonful of the warm garlic white bean mixture.

5. Add the Salami and Parmesan:
Place slices of salami evenly over the topped bread. Finish each bruschetta with a generous sprinkling of freshly grated Parmesan cheese. For a more melted effect, place the bruschetta under a broiler for 1-2 minutes until the cheese slightly melts.

6. Final Touch:
Drizzle a small amount of olive oil over each bruschetta before serving for added richness.
