Salmon Primavera Pasta with Parmesan and Crushed Red Pepper



Ingredients



- 8 oz pasta (your choice, such as linguine or fettuccine)
- 1/2 lb lemon pepper salmon
- 1 cup asparagus, trimmed and cut into 2-inch pieces
- 1 cup garden peas
- 1 cup broccoli florets
- 2 tbsp butter
- 1/4 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp crushed red pepper flakes
- 2 tbsp pasta water (reserved from cooking)

Instructions



1. Cook the Pasta:
- Fill a large pot with water and bring it to a boil over high heat.
- Add a generous pinch of salt to the boiling water.
- Add 8 oz of pasta and cook according to package instructions until al dente.
- Reserve 2 tablespoons of the pasta cooking water, then drain the pasta and set it aside.

2. Prepare the Vegetables:
- In a large skillet over medium heat, melt 2 tablespoons of butter.
- Add 1 cup of asparagus, 1 cup of garden peas, and 1 cup of broccoli florets to the skillet.
- Sauté for about 5 minutes until the vegetables are tender-crisp and bright in color.
- Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

3. Cook the Salmon:
- Push the vegetables to one side of the skillet and add the lemon pepper salmon to the empty side.
- Sear the salmon on each side for about 3-4 minutes until it is cooked through and flakes easily with a fork.

4. Combine Ingredients:
- Add the cooked pasta and reserved pasta water to the skillet with the vegetables and salmon.
- Gently mix everything together, ensuring the pasta is well-coated with the buttery sauce.
- Sprinkle in 1/4 cup of grated Parmesan cheese and 1/4 teaspoon of crushed red pepper flakes.
- Toss gently to combine all ingredients.

5. Serve:
- Transfer the pasta to a serving dish or individual plates.
- Garnish with additional Parmesan cheese and a sprinkle of crushed red pepper flakes if desired.
- Serve hot, and enjoy!
