- 1 bunch beet greens (about 4 cups), washed and chopped
- 2 cloves garlic, minced
- 2 tablespoons lemon juice (about 1 lemon)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon butter

Instructions



1. Prepare the Beet Greens:
Begin by thoroughly washing the beet greens to remove any dirt or grit. Trim and discard any tough stems, then roughly chop the leaves into bite-sized pieces. Set aside.

2. Mince the Garlic:
Peel and finely mince the garlic cloves. These will add a delightful aromatic base to your sautéed greens.

3. Heat the Oil:
In a large skillet, pour in the olive oil and heat over medium heat until shimmering.

4. Add Garlic:
Add the minced garlic to the skillet and sauté for 1 minute, until fragrant but not browned.

5. Sauté the Beet Greens:
