Sautéed Beet Greens with Garlic and Lemon
Ingredients
- 1 bunch beet greens (about 4 cups), washed and chopped
- 2 cloves garlic, minced
- 2 tablespoons lemon juice (about 1 lemon)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon butter
Instructions
1. Prepare the Beet Greens:
Begin by thoroughly washing the beet greens to remove any dirt or grit. Trim and discard any tough stems, then roughly chop the leaves into bite-sized pieces. Set aside.
2. Mince the Garlic:
Peel and finely mince the garlic cloves. These will add a delightful aromatic base to your sautéed greens.
3. Heat the Oil:
In a large skillet, pour in the olive oil and heat over medium heat until shimmering.
4. Add Garlic:
Add the minced garlic to the skillet and sauté for 1 minute, until fragrant but not browned.
5. Sauté the Beet Greens:
Add the chopped beet greens to the garlic and oil. Season with salt and pepper. Toss the greens in the oil, ensuring they are well coated.
6. Cook the Greens:
Sauté for about 5 minutes, stirring occasionally, until the greens are wilted and tender.
7. Finish with Lemon and Butter:
Drizzle the lemon juice over the sautéed greens, and add the butter. Stir until the butter is melted and the greens are evenly coated with the lemon-butter sauce. Adjust the seasoning if necessary.
8. Serve Immediately:
Transfer the sautéed beet greens to a serving dish and serve as a nutritious side for dinner.
