Sautéed Chicken and Salmon Penne with Fresh Vegetables and Feta
Ingredients
- 12 oz penne pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 small red onion, thinly sliced
- 1 cup mushrooms, sliced
- 1 cup cherry tomatoes, halved
- 1 cup grape tomatoes, halved
- 2 cups baby spinach leaves
- 1 tablespoon balsamic vinegar
- 1 tablespoon red wine vinegar
- 4 oz feta cheese, crumbled
- 8 oz boneless, skinless chicken breast, diced
- 8 oz salmon fillet, cubed
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 1 medium zucchini, sliced into half moons
- Salt and freshly ground black pepper to taste
Instructions
1. Prepare the Pasta:
- Bring a large pot of salted water to a boil. Add penne pasta and cook until al dente, approximately PT10M (10 minutes). Drain and set aside.
2. Cook the Chicken and Salmon:
- In a large pan, heat 1 tablespoon of olive oil over medium-high heat. Add diced chicken breast, season with salt and pepper, and sauté until cooked through, about PT6M (6 minutes). Remove chicken from the pan and set aside.
- In the same pan, add cubed salmon. Sauté for approximately PT4M (4 minutes) or until just cooked through. Remove from pan and set aside with the chicken.
3. Sauté the Vegetables:
- Add the remaining 1 tablespoon of olive oil to the same pan. Add minced garlic and sliced red onion. Sauté for PT2M (2 minutes) until the onion becomes translucent.
- Stir in the mushrooms and cook for another PT3M (3 minutes) until they are tender.
- Add asparagus and zucchini. Sauté for PT5M (5 minutes), or until slightly tender yet still crisp.
4. Combine Ingredients:
- Add halved cherry tomatoes, grape tomatoes, and baby spinach leaves to the pan. Sauté for an additional PT2M (2 minutes) until the spinach wilts.
- Return the cooked chicken and salmon to the pan. Stir gently, incorporating all ingredients.
- Drizzle with balsamic vinegar and red wine vinegar. Season with salt and pepper to taste, ensuring a balanced flavor.
5. Finish and Serve:
- Toss the cooked penne pasta with the sautéed mixture.
- Sprinkle crumbled feta cheese on top before serving.
