Sauteed Chicken Fajita Salad with Avocado & Lime
Ingredients
- 1 lb chicken breast, thinly sliced
- 2 tablespoons olive oil, divided
- 2 teaspoons fajita seasoning
- 1 medium red bell pepper, thinly sliced
- 1 medium yellow bell pepper, thinly sliced
- 1 large onion, thinly sliced
- 1 head romaine lettuce, chopped
- 1 ripe avocado, diced
- 2 tablespoons lime juice
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
1. Prepare the Chicken:
Coat the thinly sliced chicken breast with 1 tablespoon of olive oil and 2 teaspoons of fajita seasoning. Ensure the chicken is evenly coated.
2. Saute the Chicken:
Heat a large skillet over medium-high heat and add the seasoned chicken. Cook for about 6-8 minutes, turning occasionally, until the chicken is browned and cooked through. Remove from the skillet and set aside.
3. Cook the Vegetables:
In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced bell peppers and onion. Saute for 5-7 minutes until vegetables are tender but still crisp. Season with salt, pepper, and red pepper flakes during the last couple of minutes.
4. Prepare the Salad:
In a large bowl, combine the chopped romaine lettuce and diced avocado. Drizzle lime juice over the top and gently toss to combine.
5. Assemble the Dish:
Arrange the sauteed chicken on top of the romaine and avocado mixture. Add the cooked peppers and onions. Toss lightly to combine everything.
6. Serve:
Divide the salad into bowls or plates, ensuring each serving has a balanced mix of all ingredients.
