Sautéed Chicken & Strawberry Delight with Balsamic Glaze



Ingredients


- 2 chicken breasts, sliced into strips
- 4 cloves garlic, minced
- 2 tablespoons olive oil

- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 lemon, juiced and zested
- 1 cup potatoes, diced
- 1/2 cup peas
- 1/2 cup carrots, sliced
- 1/2 cup celery, sliced
- 1/2 cup onions, sliced
- 2 tablespoons beef butter (or regular butter)
- 1/2 cup cottage cheese
- 1 cup strawberries, hulled and quartered
- 2 cups fresh spinach
- 1 cup cooked pasta (e.g., penne or fusilli)
- 1/4 cup balsamic dressing
- 1/4 cup Parmesan dressing
- 1 cup fresh vegetables (e.g., bell peppers, zucchini), chopped

Instructions


1. Prepare the Ingredients:
- Slice the chicken breasts into strips and season with salt, black pepper, lemon zest, and paprika. Set aside.
- Dice the potatoes and other vegetables (peas, carrots, celery, onions).

2. Sauté the Vegetables:
- Heat a large skillet or wok over medium-high heat and add 1 tablespoon of olive oil.
- Add the potatoes and sauté for about PT10M 10 minutes until they begin to soften.
- Stir in the garlic, onions, peas, carrots, celery, and any fresh vegetables. Cook for an additional PT5M 5 minutes.

3. Cook the Chicken:
- In a separate pan, melt the beef butter and add the seasoned chicken strips.
- Sauté the chicken for PT7M 7 minutes, or until cooked through and golden brown. Remove from the heat.

4. Prepare the Pasta and Spinach:
- Add the cooked pasta and fresh spinach to the vegetable mixture, stirring gently to integrate the flavors.
- Drizzle with balsamic dressing and cook for PT3M 3 minutes until the spinach wilts.

5. Combine and Finish:
- Gently fold the sautéed chicken into the vegetable and pasta mixture.
- Add the quartered strawberries and cook for an additional PT2M 2 minutes, allowing the strawberries to slightly soften.
- Stir in the cottage cheese and Parmesan dressing, making sure everything is well combined.

6. Serve:
- Finish with a squeeze of fresh lemon juice before serving.
- Plate the dish attractively, ensuring that bright colors of the strawberries and spinach are visible.
