Sauteed Chicken with Banana Pepper Brine Butter
Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons olive oil
- 1/2 cup jarred sliced banana peppers
- 1/4 cup banana pepper brine (from the jar)
- 4 tablespoons unsalted butter, chilled and diced
Instructions
1. Prepare the Chicken:
Pat the chicken breasts dry with paper towels. Season both sides with kosher salt and freshly ground black pepper.
2. Heat the Pan:
In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.
3. Sauté the Chicken:
Carefully add the chicken breasts to the skillet. Cook for about 6-8 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F).
4. Remove and Rest:
Transfer the chicken to a plate and cover loosely with aluminum foil to keep warm while preparing the sauce.
5. Prepare the Brine Butter Sauce:
In the same skillet, add the jarred sliced banana peppers and sear them for 1-2 minutes until slightly caramelized. Reduce heat to medium and add the banana pepper brine.
6. Create the Emulsion:
Let the brine simmer for about 2 minutes to reduce slightly. Gradually whisk in the chilled butter, a few pieces at a time, until the sauce is smooth and glossy.
7. Serve:
Return the chicken breasts to the skillet, spooning the banana pepper brine butter sauce over them. Heat for another 1-2 minutes, ensuring the chicken is well coated.
8. Plating:
Serve immediately, garnishing with extra slices of banana peppers if desired.
