Sauteed Cucumber with Dill and Parsley
Ingredients
- 2 medium English cucumbers, sliced
- 2 tablespoons unsalted butter
- 1/2 teaspoon salt
- 2 tablespoons fresh dill, finely chopped
- 2 tablespoons fresh parsley, finely chopped
Instructions
1. Prepare the Cucumbers: Wash and dry the English cucumbers. Slice them into 1/4-inch thick rounds and set aside.
2. Prepare the Herbs: Finely chop the fresh dill and parsley. Place the chopped herbs in a small bowl and set aside for garnish.
3. Melt the Butter: In a large, nonstick skillet, melt the unsalted butter over medium heat. Allow it to bubble gently without browning for about 1 minute.
4. Saute the Cucumbers: Add the sliced cucumbers to the skillet in a single layer. Sprinkle them with the salt. Saute for about 3 minutes, frequently stirring until the cucumbers are tender but still have a slight crunch.
5. Add Herbs: Add the chopped dill and parsley to the skillet. Stir gently to combine the herbs with the cucumbers and distribute evenly.
6. Finish and Serve: Continue cooking for an additional minute, allowing the herbs to release their flavors. Remove the skillet from heat. Serve immediately while warm, either as a side dish or a light lunch.
