Sautéed Greens with Anchovy-Garlic Vinaigrette
Ingredients
- 2 cups Little Gem lettuce, chopped
- 2 cups Romaine hearts, chopped
- 1 cup Radicchio, chopped
- 4 Anchovy fillets, chopped
- 2 cloves Garlic, minced
- 3 tablespoons Olive oil
- 1/2 teaspoon Sea salt
- 1/4 teaspoon Smoked paprika
- 1 tablespoon Sherry vinegar
Instructions
1. Prepare the Greens: Start by washing and drying the Little Gem lettuce, Romaine hearts, and Radicchio. Chop each into bite-sized pieces and set aside in a large mixing bowl.
2. Create the Vinaigrette Base: In a small bowl, combine the minced garlic, chopped anchovy fillets, and sea salt. Use the back of a spoon to mash them into a rough paste.
3. Make the Vinaigrette: In a medium-sized pan, heat 2 tablespoons of olive oil over medium heat. Add the garlic and anchovy paste to the pan. Sauté for about 1 minute, stirring continuously until the anchovy fillets break down and the garlic is fragrant but not browned.
4. Season the Vinaigrette: Remove the pan from heat and immediately stir in the smoked paprika and sherry vinegar. Whisk quickly to combine and emulsify the ingredients.
5. Dress the Greens: Pour the warm vinaigrette over the bowl of chopped greens. Toss thoroughly to ensure the leaves are evenly coated with the dressing.
6. Sauté the Salad: Wipe out the pan used for the vinaigrette, and return it to medium heat with the remaining tablespoon of olive oil. Once hot, add the dressed greens. Sauté for about 3 to 4 minutes, stirring occasionally, until the greens are wilted but still bright in color.
7. Serve: Transfer the sautéed greens to a serving platter. Adjust seasoning with sea salt if necessary. Serve immediately for the best flavor and texture.
