Sauteed Herb-Infused Rice with Almonds, Mushrooms, and Broccoli



Ingredients



- 1 cup white rice
- 2 tablespoons coconut oil
- 2 cups water
- 1/2 teaspoon salt
- 1/4 cup mixed herbs (such as parsley, basil, and thyme), finely chopped
- 1/4 cup almonds, sliced
- 1 cup mushrooms, sliced
- 1 cup broccoli florets

Instructions



1. Prepare the Ingredients:
- Rinse the white rice under cold water until the water runs clear to remove excess starch.

2. Cook the Rice:
- In a medium saucepan, combine 1 cup of white rice, 2 cups of water, and 1/2 teaspoon of salt.
- Bring to a boil over medium-high heat, then reduce the heat to low.
- Cover the saucepan and let the rice simmer for about PT18M (18 minutes) until all the water is absorbed.
- Remove from heat and let it sit, covered, for an additional PT5M (5 minutes) to ensure even texture.

3. Toast the Almonds:
- While the rice is cooking, heat a large skillet over medium heat.
- Add 1/4 cup sliced almonds to the dry skillet and toast them for PT3M (3 minutes), stirring frequently, until they are golden brown and fragrant.
- Transfer the toasted almonds to a small bowl and set aside.

4. Saute the Vegetables:
- In the same skillet, add 2 tablespoons of coconut oil over medium heat.
- Once the oil is hot, add 1 cup of sliced mushrooms and 1 cup of broccoli florets.
- Saute for PT7M (7 minutes), stirring occasionally, until the mushrooms are browned and the broccoli is tender-crisp.

5. Combine and Flavor:
- Fluff the cooked rice with a fork and add it to the skillet with the sauteed mushrooms and broccoli.
- Stir in 1/4 cup of finely chopped mixed herbs.
- Add the toasted almonds and mix well to combine.

6. Season and Serve:
- Taste and adjust seasoning with more salt if necessary.
- Serve immediately, garnished with additional herbs if desired.
