Sautéed Pecorino Romano Pasta Delight
Ingredients
- 12 oz linguine or spaghetti
- 3 tablespoons olive oil
- 4 cloves garlic, thinly sliced
- 1 teaspoon crushed red pepper flakes (optional)
- 2 cups Pecorino Romano cheese, finely grated
- 1/2 cup chopped fresh parsley
- Salt and freshly ground black pepper, to taste
Instructions
1. Cook the Pasta:
Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook until al dente, according to the package instructions. Reserve 1 cup of the pasta cooking water, then drain the pasta and set aside.
2. Prepare the Aromatics:
In a large sauté pan over medium heat, warm the olive oil. Add the sliced garlic and sauté for 2-3 minutes until just golden and fragrant, being careful not to burn the garlic. Add the crushed red pepper flakes if using, and sauté for another 30 seconds.
3. Combine with Pasta:
Add the cooked pasta to the sauté pan and toss to coat in the garlic oil. Gradually sprinkle in the Pecorino Romano cheese, tossing continuously to evenly distribute and melt the cheese. If the pasta is too dry, gradually add the reserved pasta water until you achieve a creamy consistency.
4. Season and Serve:
Stir in the chopped parsley and add salt and black pepper to taste. Toss everything well to combine. Serve immediately, garnished with additional Pecorino Romano cheese and a touch of freshly ground black pepper if desired.
