Sautéed Shrimp & Bacon Pesto Pasta
Ingredients
- 8 oz pasta (linguine or spaghetti works well)
- 6 slices bacon, chopped
- 12 oz shrimp, peeled and deveined
- 1/2 cup basil pesto
- 1/2 cup grated Parmesan cheese
- 1 lemon, zested and juiced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Prepare Pasta
Duration: PT10M
Cook the pasta in a large pot of boiling salted water according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining. Set the drained pasta aside.
2. Cook Bacon
Duration: PT7M
In a large sauté pan over medium heat, add the chopped bacon. Cook until crispy, stirring occasionally, about 5-7 minutes. Remove bacon with a slotted spoon and place on a paper towel-lined plate to drain.
3. Sauté Shrimp
Duration: PT5M
Using the leftover bacon fat in the sauté pan, add the shrimp. Cook until pink and opaque, about 2-3 minutes per side. Season shrimp with salt and black pepper while cooking.
4. Combine Ingredients

Lower the heat to low and add the cooked pasta to the sauté pan. Add the basil pesto and toss to coat the pasta evenly. If the pasta seems too dry, add a little reserved pasta water, one tablespoon at a time, until the desired consistency is reached.
5. Finish the Dish

Add bacon, half of the grated Parmesan cheese, lemon zest, and lemon juice to the pan. Toss everything together to thoroughly mix. Adjust seasonings with additional salt and black pepper if needed.
6. Serve

Divide the pasta among four plates, garnishing with remaining Parmesan cheese. Serve immediately.
