Sautéed Summer Squash with Sun-Dried Tomatoes and Rosemary
Ingredients
- 2 medium summer squash, sliced into 1/4-inch rounds
- 1/3 cup sun-dried tomatoes, packed in oil, drained and sliced
- 2 tablespoons oil from sun-dried tomatoes jar
- 2 teaspoons fresh rosemary, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
1. Prepare the Ingredients:
Wash the summer squash thoroughly and slice them into 1/4-inch rounds. Drain the sun-dried tomatoes from the oil, reserving 2 tablespoons of the oil for sautéing, and slice the tomatoes thinly. Finely chop the fresh rosemary.
2. Heat the Oil:
In a large skillet, add the 2 tablespoons of reserved oil from the sun-dried tomatoes over medium heat. Allow the oil to heat for about 1 minute until shimmering.
3. Sauté the Squash:
Add the sliced summer squash to the skillet, spreading them out to ensure even cooking. Sprinkle with the salt and pepper. Sauté the squash for 5-7 minutes, flipping occasionally, until they're golden-brown and tender.
4. Add the Sun-Dried Tomatoes and Rosemary:
Stir in the sliced sun-dried tomatoes and chopped rosemary. Cook for an additional 2-3 minutes, stirring frequently, to allow the flavors to meld together.
5. Taste and Adjust:
Taste the dish and adjust the seasoning with more salt and pepper, if necessary.
6. Serve:
Transfer the sautéed squash and sun-dried tomatoes to a serving dish. Serve warm as a delightful dinner side.
