Sauteed Tuna and Egg Snack with Greek Yogurt Paprika Dressing



Ingredients



- 12 oz canned tuna, drained
- 2 boiled eggs, peeled and chopped
- 1/4 cup Greek yogurt
- 1 small shallot, finely chopped
- 2 tbsp olive oil
- 1/2 tsp smoked paprika
- 2 tbsp fresh parsley, chopped
- 1 tbsp Dijon mustard
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper

Instructions



1. Prepare the Dressing:
In a medium bowl, combine Greek yogurt, Dijon mustard, lemon zest, lemon juice, smoked paprika, salt, and black pepper. Stir well until smooth and creamy. Set aside.

2. Sauté the Shallot:
Heat olive oil in a medium skillet over medium heat. Add the finely chopped shallot and sauté until it becomes translucent, approximately 3 minutes.

3. Cook the Tuna:
Add the drained tuna to the skillet. Continue sautéing for 5 minutes, or until the tuna is heated through and slightly crispy around the edges.

4. Assemble the Snack:
In a large mixing bowl, combine sautéed tuna, boiled eggs, and fresh parsley. Mix gently to avoid breaking the eggs.

5. Add the Dressing:
Pour the Greek yogurt dressing over the tuna mixture. Stir carefully until everything is well combined and evenly coated.

6. Serve:
Transfer the mixture to a serving platter. Garnish with additional parsley and a sprinkle of smoked paprika, if desired. Serve warm or chilled.
