Sautéed Zucchini with Garlic Wine Sauce & Capers
Ingredients
- 3 medium zucchinis, sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons avocado oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1/2 cup dry white wine
- 1/2 cup vegetable broth
- 2 tablespoons lemon juice
- 2 tablespoons capers, drained
- 1/4 cup fresh parsley, chopped
Instructions
1. Prepare the Zucchini:
Sprinkle the sliced zucchinis with salt and black pepper. Set aside.
2. Heat the Pan:
In a large skillet, heat avocado oil over medium-high heat until shimmering, about 2 minutes.
3. Sauté the Zucchini:
Add the zucchini slices in a single layer to the skillet. Sauté until golden and tender, turning occasionally, for about 5-7 minutes. Remove from the skillet and set aside.
4. Create the Garlic Wine Sauce:
In the same skillet, add butter and let it melt. Add minced garlic and sauté for about 1 minute until fragrant.
5. Deglaze the Pan:
Pour in the dry white wine, stirring with a wooden spoon to scrape any brown bits off the bottom of the skillet. Cook for about 2-3 minutes until reduced by half.
6. Add Broth & Lemon Juice:
Pour in the vegetable broth and lemon juice. Stir well, and let simmer for another 3 minutes to allow flavors to meld.
7. Finish the Dish:
Return the zucchini to the pan, add capers, and stir to coat the zucchini slices in the sauce. Cook for another 2-3 minutes to heat through.
8. Garnish and Serve:
Remove from heat, sprinkle with fresh parsley, and serve immediately.
