Savory Avocado Toast with Poached Egg and Smoked Salmon



Ingredients



- 4 slices whole-grain bread
- 2 ripe avocados
- 1 lemon
- Salt, to taste
- Black pepper, freshly ground to taste
- 4 large eggs
- 4 ounces smoked salmon
- 1 tablespoon white vinegar
- 2 tablespoons fresh dill, chopped
- 1 tablespoon extra virgin olive oil
- 2 teaspoons capers

Instructions



1. Prepare the Avocado Spread
- Halve and pit the avocados.
- Scoop the avocado flesh into a bowl and mash it to a smooth consistency.
- Squeeze the juice of one lemon into the mashed avocado.
- Season with salt and freshly ground black pepper to taste. Set aside.

2. Toast the Bread
- Preheat a broiler or toaster to medium-high heat.
- Place 4 slices of whole-grain bread on a baking sheet.
- Toast the bread for about 3 to 5 minutes until golden brown and crispy. Set aside.

3. Poach the Eggs
- Fill a medium saucepan with water and bring it to a gentle simmer over medium heat. Add the white vinegar.
- Crack each egg into a separate small bowl.
- Gently slide the eggs into the simmering water.
- Poach the eggs for about 3 to 4 minutes for runny yolks or longer if desired.
- Using a slotted spoon, carefully remove the eggs and drain them on a paper towel.

4. Assemble the Toast
- Spread a generous layer of the avocado mixture over each toasted bread slice.
- Drape slices of smoked salmon evenly over the avocado.

5. Top with Poached Egg
- Place one poached egg on top of each prepared slice.

6. Garnish and Serve
- Drizzle with a little extra virgin olive oil.
- Sprinkle the toast with fresh dill and capers.
- Season with additional salt and black pepper to taste if needed.
