Savory Bacon & Egg Breakfast Skillet
Ingredients
- 8 slices of bacon
- 6 large eggs
- 1/4 cup whole milk
- 1/4 cup shredded cheddar cheese
- 1 tablespoon unsalted butter
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 green onions, sliced
- 1/4 cup cherry tomatoes, halved
Instructions
1. Prepare the Bacon
- Place a large skillet on the stove over medium heat.
- Arrange the bacon slices in a single layer in the skillet.
- Cook for about 8 minutes, turning occasionally, until bacon is crispy.
- Transfer bacon to a paper towel-lined plate to drain and cool.
2. Prepare Eggs
- In a bowl, whisk together the eggs, whole milk, salt, and black pepper until combined.
3. Cook Eggs
- Remove any excess bacon grease from the skillet, leaving about 1 tablespoon.
- Reduce the heat to low and add 1 tablespoon of unsalted butter, allowing it to melt.
- Pour the egg mixture into the skillet, stirring gently with a spatula.
- Cook for about 5 minutes, stirring occasionally until eggs are scrambled and just set.
4. Add Bacon and Cheese
- Crumble the cooled bacon and sprinkle it over the cooked eggs.
- Add the shredded cheddar cheese and stir until evenly combined and cheese is melted.
5. Garnish
- Sprinkle the sliced green onions and halved cherry tomatoes on top before serving.
