Savory Beef and Macaroni Skillet



Ingredients



- 2 tablespoons vegetable oil
- 1 pound ground beef
- 2 carrots, peeled and diced
- 1 green bell pepper, diced
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon ground cumin
- 1 can (14.5 ounces) petite diced tomatoes, undrained
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon yellow mustard
- 2 tablespoons soy sauce
- 2 cups elbow macaroni
- 2 cups water
- 1 cup low-sodium beef broth
- Optional toppings: Fresh chopped parsley, pickle chips, sliced onions, pickled jalapeños, candied sliced jalapeños, fried onions

Instructions



1. Heat the vegetable oil in a large skillet over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Use a spoon to break it apart as it cooks.

2. Drain excess fat from the skillet, then add the diced carrots, green bell pepper, and yellow onion. Sauté until the vegetables start to soften, approximately 5 minutes.

3. Stir in the minced garlic, kosher salt, black pepper, and ground cumin. Cook for another 1-2 minutes until the garlic is fragrant.

4. Add the petite diced tomatoes, including their juice, to the skillet. Mix in the ketchup, brown sugar, yellow mustard, and soy sauce. Stir well to combine.

5. Pour in the elbow macaroni, water, and beef broth. Stir to ensure the pasta is submerged. Bring the mixture to a boil.

6. Reduce the heat to low, cover the skillet, and let the mixture simmer for 12-15 minutes, or until the macaroni is cooked through and has absorbed most of the liquid.

7. Remove the skillet from the heat. Allow it to rest, covered, for 5 minutes before serving. This helps the flavors meld and any remaining liquid to be absorbed.

8. Garnish with your choice of optional toppings such as fresh chopped parsley or pickled jalapeños for added flavor and flair.
