Savory Breakfast Burrito Quiche



Ingredients


- 8 large eggs
- 1 cup cottage cheese
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup cooked sausage, crumbled
- 1/2 cup diced ham
- 1/2 cup cooked bacon, crumbled
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1 cup hash browns
- 2 flour tortillas
- 1/4 cup milk
- Salt, to taste
- Pepper, to taste
- 3 tablespoons butter
- 1 cup fresh spinach leaves
- 1 cup sliced mushrooms
- 1/2 cup diced tomatoes
- 1 pre-made pie crust
- 1/4 cup sliced green onions

Instructions


1. Prepare the Ingredients
- Crack the 8 eggs into a large mixing bowl, then whisk together with 1 cup of cottage cheese, 1 cup of shredded cheese, and 1/4 cup of milk until smooth. Season with salt and pepper to taste.

2. Cook the Vegetables
- In a large skillet, melt 1 tablespoon of butter over medium heat. Add the diced onions, bell peppers, and sliced mushrooms. Sauté for about 5 minutes, or until the vegetables are soft and aromatic. Add the spinach and cook for another 2 minutes until wilted. Remove from heat and set aside.

3. Cook the Meats
- In the same skillet, add another tablespoon of butter. Cook the hash browns for about 5 minutes, until golden brown. Remove from the skillet. Add the crumbled sausage, diced ham, and cooked bacon to the skillet, and stir until warmed through.

4. Assemble the Quiche
- Preheat the oven to 375°F.
- Butter a pie dish and place the pre-made pie crust inside, pressing gently against the sides.
- Lay the two flour tortillas over the bottom of the pie crust, allowing the edges to overlap.
- Evenly spread the hash browns over the tortillas.
- Distribute the cooked vegetables over the hash browns, followed by the meat mixture.
- Pour the egg mixture over the layered ingredients carefully. Add the diced tomatoes and finish with sliced green onions on top.

5. Bake the Quiche
- Place the assembled quiche into the preheated oven. Bake for about 35–40 minutes, or until the egg mixture is set and the top is golden brown. Allow it to cool slightly before slicing and serving.
