Ingredients

Instructions
1. Prepare the Base Mixture
- In a medium saucepan, heat 2 cups of cultured milk over medium-low heat until it reaches a gentle simmer. Do not let it boil.
- Stir in 1 teaspoon of salt and 1/2 teaspoon of enzymes, continuing to stir until the enzymes are fully dissolved.
2. Incorporate Color and Preservatives
- Add 1/4 teaspoon of annatto to the mixture for a rich, cheesy color. Stir consistently to ensure even distribution of color.
- Mix in 1/8 teaspoon of natamycin to ensure the snacks stay fresh longer.
3. Thickening the Mixture
- Gradually whisk in 2 tablespoons of potato starch, ensuring there are no lumps. The mixture should start to thicken slightly.
- Sprinkle in 1 tablespoon of cellulose powder while stirring to aid in thickening and texture.
4. Activate Stabilizer
- Add 1/2 teaspoon of glucose oxidase to help stabilize the mixture and improve shelf-life.
- Continue to stir for an additional 5 minutes, maintaining the simmer.
5. Chill the Mixture
- Remove the saucepan from the heat and let the mixture cool slightly.
- Pour the mixture into a shallow dish to cool to room temperature, then refrigerate for 30 minutes until it sets.
6. Shape and Serve
- Once the mixture has set, scoop small portions and shape them into bite-sized puffs.
