Savory Chicken & Broccoli Stir Fry with Peanut Garnish
Ingredients
- 1 cup uncooked rice
- 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
- 1/3 cup soy sauce
- 2 cups broccoli florets
- 1 medium onion, sliced
- 1/4 cup chopped peanuts
- 1 red bell pepper, sliced
- 2 large eggs, beaten
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
1. Prepare the Rice
- Cook 1 cup of rice according to package instructions. Set aside once done.

2. Prepare the Chicken Marinade

5. Scramble the Eggs
- Push the vegetables to one side of the skillet. Pour the beaten eggs into the skillet and scramble until fully cooked. Mix the scrambled eggs with the vegetables.
6. Combine Ingredients
- Return the cooked chicken to the skillet and add the cooked rice. Pour the remaining soy sauce over the mixture and stir to combine all ingredients evenly. Cook for an additional 3 minutes, allowing the flavors to meld.
7. Final Touches
- Season with salt and pepper to taste. Sprinkle the chopped peanuts on top before serving.
