Ingredients

- 1 cup mixed beans, rinsed and sorted
- 1 ham bone
- 1 cup diced ham
- 1/2 lb smoked sausage, sliced
- 1/2 lb Italian sausage, crumbled
- 2 cups kale, chopped
- 2 carrots, peeled and diced
- 1 cup Great Northern beans, rinsed and sorted
- 1 cup split peas, rinsed
- 1 cup cannellini beans, rinsed and sorted
- 2 potatoes, peeled and cubed
- 8 cups broth (chicken or vegetable)
- 1 cup pasta (small shapes like ditalini or elbow)
- 1 cup Tuscan-style beans, rinsed and sorted
- 1 poblano pepper, diced
- 1 can (4 oz) green chiles, diced
- 1 cup sweet corn
- 1 cup shredded chicken breasts
- 1 cup ground chicken, cooked
- 1/2 cup sour cream
- 1/4 cup cilantro, chopped
- 1 cup tomato sauce
- 1 can (15 oz) canned black beans, rinsed and drained
- 4 slices bacon, crisped and crumbled
- 2 cups diced butternut squash
- 1 cup ground beef, cooked
- 1 cup mixed TexMex vegetables
- 1 cup pinto beans, rinsed and sorted

Instructions

1. Prepare the Ingredients: Start by rinsing and sorting all the beans, split peas, and Tuscan-style beans to remove any debris. Dice the ham, slice the smoked sausage, and crumble the Italian sausage. Peel and dice the carrots and potatoes. Chop the kale and cilantro.

2. Layer the Base: In a large crock pot, add the ham bone, mixed beans, Great Northern beans, cannellini beans, Tuscan-style beans, split peas, and pinto beans. Add the diced ham, smoked sausage, Italian sausage, shredded chicken, ground chicken, ground beef, poblano pepper, diced green chiles, butternut squash, potatoes, carrots, and mixed TexMex vegetables.

3. Pour the Broth and Seasonings: Pour the 8 cups of broth into the crock pot, ensuring all ingredients are submerged. Add the tomato sauce and stir gently to combine.

4. Cook the Stew: Set the crock pot on low heat and cook for approximately 8 hours, stirring occasionally.

5. Add Final Ingredients: About 30 minutes before serving, add pasta and sweet corn. Stir well.

6. Integrate the Finishing Touches: Once the pasta is tender, turn off the crock pot. Stir in the sour cream and chopped cilantro for added creaminess and flavor.

7. Prepare to Serve: Ladle the stew into bowls, ensuring each serving includes a mix of meats, beans, vegetables, and pasta. Top with crumbled bacon for extra flavor.
