Savory Dijon Chicken Croissant Sandwiches with Bacon Jam
Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon and herb seasoning
- 1/4 cup Sauvignon Blanc
- 1 teaspoon garlic powder
- 2 tablespoons bacon jam
- 1 stalk celery, finely diced
- 1/2 cup diced red bell pepper
- 2 hard-boiled eggs, chopped
- 1 teaspoon paprika
- 1 head Romaine lettuce, leaves separated
- 4 croissants, sliced in half
- 1/2 cup crushed potato chips
Instructions
1. Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the chicken breasts.
2. Prepare the Chicken Breasts:
- Place the chicken breasts on a baking sheet lined with parchment paper.
- In a small bowl, mix the Dijon mustard, lemon and herb seasoning, garlic powder, and 1 tablespoon of Sauvignon Blanc.
- Apply the mixture evenly over the chicken breasts.
- Pour the remaining Sauvignon Blanc around the chicken to keep it moist during cooking.
3. Bake the Chicken:
- Insert the baking sheet into the preheated oven.
- Bake for approximately 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Once done, let it rest for at least 10 minutes before slicing thinly.
4. Make the Filling:
- In a large bowl, combine the diced celery, diced bell pepper, chopped hard-boiled eggs, and paprika.
- Add the sliced chicken pieces to this mixture, gently tossing to combine.
5. Assemble the Sandwiches:
- Spread a thin layer of bacon jam on the bottom halves of the croissants.
- Place a Romaine lettuce leaf over the jam.
- Add a generous scoop of the chicken mixture on top of the lettuce.
- Sprinkle with crushed potato chips for added crunch.
- Close the sandwiches with the top halves of the croissants.
