Savory Garlic Anchovy & Cheddar Cheese Sauté
Ingredients
- 8 fillets anchovies, drained
- 2 tablespoons olive oil
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon salt
- 4 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes
- 1 cup shredded cheddar cheese
Instructions
1. Prepare the Ingredients:
- Drain the anchovy fillets and pat them dry with a paper towel.
- Peel and thinly slice the garlic cloves.
- Grate the cheddar cheese if not pre-shredded.
2. Heat the Oil:
- In a large sauté pan, combine 2 tablespoons of olive oil and 1 tablespoon of extra virgin olive oil over medium heat.
- Heat until the oil is shimmering, ensuring it does not begin to smoke.
3. Sauté the Garlic:
- Add the sliced garlic to the pan, stirring frequently.
- Cook until the garlic turns golden brown, approximately 2-3 minutes.
4. Add the Anchovies and Red Pepper Flakes:
- Reduce the heat to medium-low.
- Introduce the anchovy fillets and red pepper flakes to the pan.
- Stir continuously, gently breaking down the anchovies with a wooden spoon until they dissolve into the oil, around 2-3 minutes.
5. Incorporate the Cheese:
- Sprinkle the shredded cheddar cheese evenly across the pan.
- Stir until the cheese melts and blends smoothly with the oil, garlic, and anchovies to create an aromatic sauce, about 2-3 minutes.
6. Final Seasoning:
- Taste and adjust with a pinch of salt, if necessary.
7. Serve:
- Remove the sauté from heat and serve immediately, possibly over warm crusty bread or roasted vegetables for a satisfying lunch.
