Savory Ham & Vegetable Stew with a Citrus Zest



Ingredients



- 2 tablespoons olive oil
- 1 large onion, diced
- 2 medium carrots, sliced
- 1 pound boneless ham steak, cubed
- 3 cloves garlic, minced
- 2 sprigs fresh rosemary

- 1/2 teaspoon fresh ground black pepper
- 1/4 teaspoon crushed red pepper flakes
- 1 small head of white cabbage, chopped
- 14.5-ounce can diced tomatoes with juices
- 2 cups chicken stock
- 2 cups ham stock
- 1 cup vegetable broth
- 2 bay leaves
- 1 teaspoon salt
- 4 thin slices of lemon

Instructions



1. Heat the Olive Oil
- Heat 2 tablespoons of olive oil in a large stockpot over medium heat.

2. Sauté the Aromatics
- Add the diced onion and sliced carrots. Sauté for about PT5M (5 minutes) until the vegetables begin to soften.

3. Cook the Ham
- Stir in the cubed ham steak and cook for PT3M (3 minutes), allowing the edges of the ham to brown slightly.

4. Infuse with Garlic and Herbs
- Add the minced garlic, fresh rosemary sprigs, dried rosemary, fresh ground black pepper, and crushed red pepper flakes. Stir continuously for PT2M (2 minutes) to release their aromas.

5. Add Cabbage and Tomatoes
- Incorporate the chopped cabbage and the can of diced tomatoes with juices into the pot. Mix well to combine all ingredients.

6. Pour in the Stocks and Season
- Pour the chicken stock, ham stock, and vegetable broth into the pot. Add the bay leaves and salt. Stir to mix all components thoroughly.

7. Simmer the Stew
- Bring the stew to a gentle boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer for PT35M (35 minutes) until the vegetables are tender.

8. Finish with Citrus
- Remove the bay leaves from the stew. Garnish with thin slices of lemon for a refreshing zest just before serving.
