Savory Herb-Crusted Chicken with Garlic Mashed Potatoes
Ingredients
For the Herb-Crusted Chicken:
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 tablespoon water
- 1 cup seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 teaspoons dried Italian herbs (basil, oregano, thyme)
- Salt and pepper to taste
- 2 tablespoons olive oil
For the Garlic Mashed Potatoes:
- 2 pounds russet potatoes, peeled and cubed
- 4 cloves garlic, minced
- 1/2 cup whole milk
- 1/4 cup unsalted butter
- Salt and pepper to taste
Instructions
1. Prepare the Chicken Coating:
In a shallow dish, place the flour. In a separate bowl, whisk together the eggs and a tablespoon of water. In another dish, combine the breadcrumbs, Parmesan cheese, Italian herbs, salt, and pepper.
2. Coat the Chicken:
Pat the chicken breasts dry with paper towels. Dredge each breast in the flour, shaking off any excess. Dip them into the beaten egg mixture, and finally, coat them in the breadcrumb mixture, pressing gently to adhere.
3. Cook the Chicken:
Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 5-7 minutes per side, until golden brown and cooked through. Transfer to a paper towel-lined plate to drain any excess oil.
4. Prepare the Mashed Potatoes:
In a large pot, bring water to a boil. Add the cubed potatoes and garlic. Cook for 15-20 minutes, or until the potatoes are tender when pierced with a fork. Drain and return the potatoes and garlic to the pot.
5. Mash the Potatoes:
Add the milk and butter to the pot with the potatoes. Mash using a potato masher until smooth and creamy, adding more milk if necessary. Season with salt and pepper to taste.
6. Serve the Dish:
Plate the herb-crusted chicken alongside a generous serving of garlic mashed potatoes. Optionally garnish with chopped fresh parsley for added color.
