Savory Herb-Crusted Chicken with Garlic Mashed Potatoes

- 4 tablespoons unsalted butter
- 3 cloves garlic, minced

Instructions
Step 1: Prepare the Marinade
1. In a large bowl, mix 1/4 cup olive oil, lemon juice, minced garlic, salt, and pepper.
2. Add the chicken breasts, turning to coat. Cover and refrigerate for at least 1 hour.
Step 2: Make the Herb Crust
1. In a shallow dish, combine breadcrumbs, Parmesan cheese, rosemary, and thyme.
2. Remove chicken from marinade and allow excess to drip off. Press chicken into breadcrumb mixture, ensuring even coating on all sides.
Step 3: Cook the Chicken
1. Preheat oven to 375°F (190°C).
2. In an oven-safe skillet, heat 2 tablespoons of olive oil over medium heat.
3. Add the chicken and sear for 3 minutes on each side until golden brown.
4. Transfer skillet to the oven and bake for 15-20 minutes or until the internal temperature reaches 165°F.
Step 4: Prepare the Garlic Mashed Potatoes
1. Place diced potatoes in a large pot and cover with water. Bring to a boil, then reduce to simmer for about 15 minutes or until tender.
2. Drain potatoes and return to the pot.
3. In a small saucepan, heat milk and butter together until butter is melted.
4. Pour into pot with potatoes and add the minced garlic, salt, and pepper.
5. Mash until smooth and creamy.
