Savory Herb-Infused Tomato Basil Sauce

Ingredients

- 8 medium-sized tomatoes, chopped
- 4 cloves garlic, minced
- 1 cup fresh basil leaves, chopped
- 1/4 cup fresh parsley, chopped
- 1/2 cup olive oil
- 1 medium onion, finely chopped
- 1 teaspoon dried oregano
- 1 teaspoon Italian seasoning
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon sugar
- 2 medium carrots, grated

Instructions

1. Prepare Ingredients: Start by washing all fresh produce. Chop the tomatoes into small pieces, mince the garlic, and finely chop the basil and parsley. Peel and grate the carrots and dice the onion. Set aside.

2. Heat Olive Oil: In a large saucepan, pour 1/2 cup olive oil and heat over medium heat until shimmering.

3. Sauté Aromatics: Add the chopped onion and minced garlic to the pan. Sauté for about 5 minutes or until the onion becomes translucent and fragrant.

4. Add Carrots and Herbs: Stir in the grated carrots, followed by the dried oregano, Italian seasoning, dried rosemary, and red pepper flakes. Cook for an additional 3 minutes, allowing the flavors to meld.

5. Tomatoes and Seasonings: Add the chopped tomatoes to the saucepan. Stir to combine with the vegetable and herb mixture. Season with salt, pepper, and sugar. Increase the heat to medium-high and bring the mixture to a gentle simmer.

6. Simmer and Reduce: Lower the heat to medium-low, cover with a lid, and let simmer for 30 minutes, stirring occasionally. This will help reduce the sauce and intensify the flavors.

7. Finish with Fresh Herbs: Uncover the saucepan and stir in the chopped basil and parsley. Continue to cook uncovered for an additional 10 minutes, allowing the herbs to infuse their flavors into the sauce.

8. Final Seasoning: Taste and adjust seasoning with more salt, pepper, or sugar if necessary. Remove from heat and let the sauce sit for a few minutes before serving.

9. Serve: Pair this rich and aromatic sauce with your favorite pasta or as a fragrant topping for grilled vegetables or baked proteins.
